  • Diner en Blanc took over Liberty Square on Friday with almost 700 guests

The fourth edition of Le Diner en Blanc Charleston swarmed Liberty Square on Friday, bringing with it almost 700 diners who spent the evening noshing on gourmet food and swilling red, white, and rose.

As usual, Diner en Blanc guests went all out, donning full white outfits (kudos to the guys who found white pants), flower crowns, inventive head gear. The precision with which the Diner en Blanc group leaders led the crowds into the square and helped them set up their tables was impressive and in less than 30 minutes the place was packed, as if long rows of white tables and chairs had been there all along.
While some guests proudly brought big balloons — the kind, even, with confetti floating inside — park rangers quickly informed revelers that those balloons would need to be deflated and carefully removed. more…

    Filled Donuts: Flavor Injection

Spend a little more time in contemplation of your hot, fluffy pastry with Groupon’s look at how donuts get filled.

Bite into the soft midsection of a donut packed with jelly, custard, cream, or any other decadent cargo and it may seem a little magical: how does the filling get inside, and stay there without leaking out? In most cases, the answer is quite simple: after the donut comes out of the oven, the baker grabs a pastry bag equipped with a long, sharply angled metal piping tip, pokes it through the side of the donut, and squeezes in a petite dollop of filling. (It’s best to do this while it’s still hot, so that the dough will easily stretch without tearing and the sticky filling will set slightly to seal the hole.) Larger bakeries get a little mechanical help in this process with machines programmed to dispense a certain amount of filling at the push of a button, but the principle remains the same. Scan the side—or, in the case of an éclair or a long john, the end—of a filled donut, and you’ll probably see a small mark where the tube has been poked in.

If you don’t, there is a second option: the baker makes three rounds of dough, eats one, spoons filling onto another, and secures the other on top before frying. This works best with fruit fillings, which can stand up to heat; although it does introduce the risk of donuts coming apart in the fryer, the method more easily accommodates larger blobs of filling.

Once you know how to fill donuts at home, you can replicate a classic German practical joke. At New Years’ Eve parties, Germans are known for secretly filling a couple of donuts with mustard to predict which friendships they’ll lose in the new year.

Beaufort, South Carolina: Historic Seaport with Coastal Beauty

A historic Lowcountry seaport just north of Hilton Head, Beaufort imbues classic Southern charm so well that it served as a backdrop for such films as Forrest Gump and The Prince of Tides. Home to well-preserved antebellum mansions and pristine beachfront, this photogenic town topped Coastal Living’s list of the happiest US seaside cities. Downtown, you can browse knickknacks at antique stores and munch on fresh-caught shrimp at dockside restaurants.

One of the area’s most photographed sites is at the end of a long country road about 17 miles north of town. Take Old Sheldon Road off of Route 17 to find the faded red-brick ruins of the pre-revolutionary Old Sheldon Church. Built in the late 1740s, the church was destroyed during the Revolutionary War, rebuilt in 1826, and then destroyed again (local lore states that it was set on fire during Sherman’s March to the Sea in 1865, but this has not been confirmed). It’s shaded by large, old growth oaks draped in spanish moss, making it a popular spot for wedding and graduation pictures.

South of Beaufort lies a barrier island occupied by Hunting Island State Park, which includes a 5-mile stretch of beach and thousands of acres of marsh and tidal creeks. Climb to the top of the park’s 133-foot black-and-white lighthouse to look out on panoramic views of the ocean. Those visiting during the summer might also spot the loggerhead turtles nesting on the beach.
